Warm Coconut Cardamom Rice Pudding Bowl: A Comforting Dessert

Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • Pinch of salt
  • 1 can (400 ml) coconut milk
  • 1 tsp ground cardamom
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds
  • Mint leaves for garnish

Instructions

  1. In a saucepan, combine 1 cup of jasmine rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer and cover for 15 minutes.
  2. Once the rice has absorbed the water, add 1 can (400 ml) of coconut milk and 1 tsp of ground cardamom. Stir well.
  3. Simmer gently over low heat for an additional 10 minutes, stirring occasionally to prevent sticking.
  4. Add 1/4 cup of golden raisins and cook for an additional 5 minutes.
  5. While cooking, toast 1/4 cup of slivered almonds in a dry skillet over medium heat for 3-5 minutes until golden.
  6. Remove the pudding from heat and let it cool slightly before serving.
  7. Serve warm in bowls, topped with toasted almonds and a sprig of mint for garnish.
