Ingredients

  • 300g firm tofu
  • 200ml coconut milk
  • Juice and zest of 1 lime
  • 2 tablespoons soy sauce
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 250g jasmine rice
  • 100g shredded carrots
  • Fresh cilantro for garnish
  • Lime wedges for garnish
