Crispy Duck & Orange Salad Bowl

Ingredients

  • 2 duck breasts (about 200g each)
  • 150g mixed salad greens
  • 2 oranges (segmented)
  • 50g candied walnuts
  • 60ml olive oil
  • 60ml fresh orange juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the duck breast with salt and pepper on both sides.
  3. Place the duck breast skin-side down in a hot skillet and sear for 6-8 minutes until the skin is golden brown and crispy.
  4. Flip the duck and transfer the skillet to the preheated oven. Roast for an additional 10-12 minutes.
  5. Remove the duck from the oven and let it rest for 5 minutes before slicing.
  6. In a large bowl, mix together the salad greens.
  7. Add the orange segments and candied walnuts to the salad greens.
  8. For the vinaigrette, whisk together orange juice, olive oil, salt, and pepper.
  9. Slice the duck breast thinly and arrange it on top of the salad.
  10. Drizzle the orange vinaigrette over the top and serve immediately.
