Crispy Salmon Soba Bowl with Sesame Soy Dressing

Ingredients

  • 200g salmon fillet
  • 100g soba noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 2 radishes, sliced
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Season the salmon fillet with salt and pepper.
  2. Heat a pan over medium-high heat and add a little oil.
  3. Place the salmon skin-side down in the pan and cook for about 4-5 minutes until crispy.
  4. Flip the salmon and cook for an additional 3-4 minutes until cooked through.
  5. While the salmon is cooking, prepare the soba noodles according to package instructions.
  6. Drain and rinse the soba noodles under cold water to cool them down.
  7. In a small bowl, mix together soy sauce, sesame oil, and rice vinegar to create the dressing.
  8. Slice the green onions and radishes.
  9. Assemble the bowl by placing soba noodles at the bottom, topped with crispy salmon, sliced radishes, and green onions.
