Ingredients

  • 200 grams ramen noodles
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 150 grams shiitake mushrooms, sliced
  • 2 soft-boiled eggs
  • 2 green onions, chopped
  • Fresh herbs (e.g. mint, cilantro) for garnish

Instructions

  1. Prepare the garlic sesame broth by sautéing minced garlic in sesame oil over medium heat until fragrant.
  2. Add vegetable broth and soy sauce, simmer for 10 minutes.
  3. Cook the ramen noodles according to package instructions, then drain and set aside.
  4. In the same pot, add sliced shiitake mushrooms to the broth and cook for an additional 5 minutes.
  5. Prepare soft-boiled eggs: boil eggs for 6-7 minutes, then cool in ice water before peeling.
  6. In serving bowls, divide cooked noodles and pour the garlic sesame broth with mushrooms over them.
  7. Top with halved soft-boiled eggs and garnish with chopped green onions and fresh herbs.
