Ginger Scallion Turkey Udon Bowl

Ingredients

  • 200g sliced turkey breast
  • 150g thick udon noodles
  • 1 liter water
  • 1 tablespoon minced ginger
  • 2 chopped scallions
  • 100g shiitake mushrooms, sliced
  • Salt to taste

Instructions

  1. Prepare the broth by boiling water in a large pot and adding ginger and scallions.
  2. Once boiling, lower the heat and let it simmer for 15 minutes to extract flavors.
  3. Add sliced turkey breast to the broth and cook until tender, about 5-7 minutes.
  4. In a separate pot, cook udon noodles according to the package instructions.
  5. Drain the noodles and set aside.
  6. Add shiitake mushrooms to the broth and cook for an additional 5 minutes.
  7. To assemble, place cooked udon noodles in a bowl, pour the ginger scallion broth over them, and top with slices of turkey.
