Ingredients

  • 2 duck breasts
  • 1 cup quinoa
  • 2 baby bok choy
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 scallions, chopped
  • 1-inch piece fresh ginger, grated
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • 2 soft-boiled eggs (optional)

Instructions

  1. Begin by preparing the duck breast. Score the skin in a diamond pattern, ensuring not to cut into the meat.
  2. Season the duck with salt and pepper. Place it skin-side down in a cold skillet over medium heat.
  3. Render the fat for 6-8 minutes until the skin is crispy, then flip and cook for an additional 4-5 minutes. Remove from heat and let rest.
  4. Cook the quinoa according to package instructions. Usually, this requires rinsing and boiling in water for about 15 minutes.
  5. While the quinoa cooks, steam the baby bok choy until just tender, about 3-4 minutes.
  6. For the scallion ginger sauce, mix finely chopped scallions, ginger, soy sauce, and a teaspoon of sesame oil in a bowl.
  7. Slice the rested duck breast against the grain into thin strips.
  8. In a large bowl, assemble the meal: place quinoa at the base, add bok choy and duck slices on top, then drizzle with scallion ginger sauce.
