Ingredients

  • 200g farro
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 150g Greek yogurt
  • 100g cucumber (diced)
  • 1 clove garlic (minced)
  • 1 tablespoon fresh dill (chopped)
  • Juice of 1 lemon
  • 100g baby spinach
  • 100g cherry tomatoes (halved)
  • 50g red onion (sliced)

Instructions

  1. Cook the farro according to package instructions; drain and set aside.
  2. Season the chicken breasts with olive oil, garlic powder, salt, and pepper, then grill until cooked through.
  3. Slice the grilled chicken and set aside.
  4. Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl.
  5. In serving bowls, layer the cooked farro, spinach, sliced cucumbers, cherry tomatoes, and red onion.
