Ingredients

  • 250g halloumi cheese
  • 150g cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 100g mixed olives (black and green)
  • 150g fresh spinach or mixed greens
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Start by preheating your grill or grill pan over medium heat.
  2. Slice the halloumi cheese into even rounds, about 1 cm thick.
  3. Grill the halloumi slices for about 2-3 minutes on each side until they have nice grill marks.
  4. While the halloumi is grilling, wash and chop the tomatoes, cucumbers, and greens.
  5. In a bowl, combine the chopped greens, tomatoes, cucumbers, and olives.
