Ingredients

  • 2 medium zucchinis
  • 200g burrata cheese
  • 250g cherry tomatoes
  • 50g pine nuts
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic reduction
  • Salt and pepper to taste
  • Fresh spinach or mixed greens

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini into thin ribbons or rounds.
  3. Drizzle olive oil over the zucchini and season with salt and pepper.
  4. Grill the zucchini for 3-4 minutes on each side, or until charred and tender.
  5. Remove the zucchini from the grill and let it cool slightly.
