Harissa Chicken Protein Bowl with Roasted Carrots

Ingredients

  • 3 chicken breasts (about 600g)
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 300g couscous
  • 300g carrots (about 3 medium-sized)
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix harissa paste, olive oil, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Place the marinated chicken on a baking tray and roast in the oven for 25-30 minutes, or until fully cooked.
  4. Meanwhile, wash and slice the carrots. Toss them in olive oil, salt, and pepper.
  5. Add the carrots to the baking tray with the chicken for the last 15 minutes of cooking.
  6. Prepare couscous according to package instructions. Fluff with a fork once cooked.
  7. Once the chicken and carrots are cooked, remove them from the oven and let them rest for 5 minutes.
