Ingredients

  • 500g lamb shoulder, cubed
  • 2 tablespoons harissa paste
  • 200g pearl couscous
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 200g plain yogurt
  • 1 tablespoon lemon juice
  • Fresh mint, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Season lamb with harissa rub, ensuring it’s evenly coated.
  3. Heat oil in a skillet over medium-high heat and sear the lamb on all sides until browned.
  4. Transfer the skillet to the oven and roast the lamb for about 15-20 minutes until cooked through.
  5. While the lamb is roasting, prepare the pearl couscous according to package instructions, usually taking around 10-12 minutes.
  6. In a separate pan, toss zucchini and red peppers with olive oil, salt, and pepper, then roast in the oven alongside the lamb for the last 10 minutes.
  7. For the mint yogurt sauce, combine yogurt, fresh mint, lemon juice, salt, and pepper in a bowl, mixing well.
  8. Once everything is cooked, slice the lamb into cubes.
