Ingredients

  • 500g turkey breast
  • 2 tablespoons honey
  • 2 tablespoons chipotle sauce
  • 150g tri-color quinoa
  • 2 bell peppers, assorted colors
  • 100g Greek yogurt
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Season the turkey breast with honey, chipotle sauce, salt, and pepper.
  3. Roast the turkey in the oven for about 25-30 minutes until fully cooked.
  4. While the turkey cooks, rinse the tri-color quinoa under cold water.
  5. Combine the quinoa with water in a pot (2:1 ratio), and bring to a boil.
