Ingredients

  • 2 salmon fillets (about 150g each)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 cup cooked kamut
  • 200g Brussels sprouts, halved
  • ½ cup dried cranberries
  • ¼ cup toasted pecans
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix honey and mustard to create a glaze.
  3. Place salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the glaze over the salmon fillets.
  5. Roast the salmon in the preheated oven for 12-15 minutes or until cooked through.
