Ingredients

  • 200 g somen noodles
  • 2 soft-boiled eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 200 ml dashi stock
  • 2 scallions
  • 1 sheet nori

Instructions

  1. Cook the somen noodles according to the package instructions, then drain and rinse under cold water to cool.
  2. Prepare the soft-boiled eggs: Boil eggs for 6-7 minutes, then transfer to an ice bath to cool.
  3. Cut the scallions into thin slices.
  4. Prepare the dipping sauce by mixing soy sauce, mirin, and dashi stock in a small bowl.
  5. Assemble the bowl by placing a serving of somen noodles in each bowl.
  6. Add the soft-boiled egg, sliced scallions, and a piece of nori on top of the noodles.
  7. Serve the dipping sauce on the side for each bowl.
