Lemon Dill Salmon Wild Rice Bowl Recipe

Ingredients

  • 2 salmon fillets (approximately 200g each)
  • 1 cup wild rice
  • 1 bunch asparagus, trimmed
  • 1 cup plain yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup peas (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the salmon fillets with salt, pepper, and lemon juice.
  3. Place the salmon on a baking tray lined with parchment paper.
  4. Bake the salmon for 15-20 minutes or until cooked through.
  5. Meanwhile, cook the wild rice according to package instructions.
  6. In a separate pan, roast the asparagus with a drizzle of olive oil, salt, and pepper for 10-15 minutes until tender.
