Ingredients

  • 2 cups frozen banana chunks
  • 1 cup lemon juice
  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 3 egg whites
  • 1/2 cup sugar
  • Lemon curd
  • Shortbread crumbs
  • Lemon slices for garnish

Instructions

  1. In a blender, combine 2 cups of frozen banana chunks, 1 cup of lemon juice, 1 cup of Greek yogurt, and 2 tablespoons of honey. Blend until smooth.
  2. Pour the smoothie base into a bowl.
  3. In a mixing bowl, whip 3 egg whites until soft peaks form, then gradually add 1/2 cup of sugar and continue to whip until stiff peaks form.
