Ingredients

  • 500g pork loin
  • 2 tablespoons minced lemongrass
  • 4 cloves garlic, minced
  • 2 tablespoons sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 200g rice vermicelli
  • 1 carrot, julienned
  • 1 cucumber, sliced
  • Fresh cilantro for garnish
  • 40g crushed peanuts for topping

Instructions

  1. Marinate the pork with minced lemongrass, garlic, sugar, soy sauce, and fish sauce for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the marinated pork for 4-5 minutes on each side, or until fully cooked.
  4. While the pork is grilling, cook the rice vermicelli according to package instructions and set aside.
  5. Prepare the pickled vegetables by soaking shredded carrots and cucumbers in vinegar and sugar for at least 20 minutes.
