Ingredients

  • 200 g firm tofu
  • 2 tablespoons lemongrass (finely chopped)
  • 2 tablespoons soy sauce
  • 200 g rice noodles
  • 1 tablespoon vegetable oil
  • 1 cucumber (sliced)
  • 1 carrot (julienned)
  • Fresh cilantro for garnish
  • Roasted peanuts (for garnish)

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. Marinate tofu in lemongrass, soy sauce, and a pinch of salt for 15 minutes.
  3. While marinating, prepare rice noodles according to package instructions.
  4. Heat oil in a skillet over medium heat, then add marinated tofu.
  5. Cook tofu until golden brown on all sides, about 8-10 minutes.
  6. Slice cucumbers and julienne carrots.
