Ingredients

  • 2 medium sweet potatoes
  • 4 slices of bacon
  • 1 avocado
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice 2 medium sweet potatoes into small cubes.
  3. Toss the sweet potato cubes in a bowl with olive oil, salt, and pepper.
  4. Spread the sweet potatoes on a baking sheet in a single layer.
  5. Bake for 25-30 minutes or until tender and slightly caramelized, tossing halfway through for even cooking.
  6. Meanwhile, cook 4 slices of bacon in a skillet over medium heat until crispy.
