Ingredients

  • 2 chicken breasts (around 300g)
  • 1 medium acorn squash (about 400g)
  • 4 cups autumn greens (spinach, arugula, or mixed greens)
  • 1/2 cup dried figs (about 100g)
  • 1/4 cup pepitas (pumpkin seeds)
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • Olive oil, salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C. Season chicken breasts with salt, pepper, and your choice of herbs. Place on a baking sheet.
  2. Cut the acorn squash in half, scoop out the seeds, and slice into crescent-shaped pieces. Toss with olive oil, salt, and pepper.
  3. Add the acorn squash to the baking sheet with chicken. Roast for about 25-30 minutes until the chicken is cooked through and squash is tender.
  4. While the chicken and squash are roasting, prepare the salad base by placing fresh autumn greens in a large bowl.
  5. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  6. In a small bowl, whisk together maple syrup, Dijon mustard, and a splash of olive oil to create the dressing.
  7. Layer the sliced chicken and roasted squash on top of the greens. Add dried figs and pepitas.
  8. Drizzle the maple Dijon dressing over the bowl just before serving.
