Ingredients

  • 200g freekeh
  • 1 medium eggplant
  • 150g cherry tomatoes
  • 100g feta cheese
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (basil or parsley)

Instructions

  1. Cook freekeh according to package instructions. Generally, it takes about 20 minutes, using a ratio of 1 cup freekeh to 2 cups water.
  2. While freekeh is cooking, preheat your oven to 200°C (400°F).
  3. Dice eggplant into small cubes and spread them on a baking sheet. Drizzle with olive oil, salt, and pepper, then roast for about 25 minutes until golden and tender.
  4. Halve the cherry tomatoes and set them aside. You can either leave them raw or roast them for extra flavor.
  5. Once freekeh is cooked and eggplant is roasted, combine them in a large bowl.
