Ingredients

  • 200g lentils
  • 200g tomatoes
  • 150g cucumbers
  • 1 lemon
  • 2 tablespoons olive oil
  • Fresh parsley (one handful)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by rinsing 200g of lentils under cold water.
  2. Cook the lentils in a pot with 500ml of water for about 20-25 minutes until tender.
  3. While the lentils are cooking, chop 200g of tomatoes and 150g of cucumbers into bite-sized pieces.
  4. Drain the cooked lentils and let them cool slightly.
  5. In a large bowl, combine the lentils, chopped tomatoes, and cucumbers.
  6. Chop a handful of fresh parsley and add it to the bowl.
  7. In a small bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil, salt, and pepper to taste.
  8. Pour the dressing over the salad mixture and stir gently to combine.
  9. Let it sit for 10 minutes to allow flavors to meld before serving.
  10. Serve chilled or at room temperature, garnished with extra parsley if desired.
