Mediterranean Quinoa Bowl with Roasted Vegetables and Feta

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 medium zucchini
  • 1 cup cherry tomatoes
  • 100g feta cheese
  • 1/2 cup black olives
  • 2 tablespoons tahini
  • Juice of 1 lemon
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rinse 1 cup of quinoa under cold water. In a pot, combine the quinoa with 2 cups of water, and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until all water is absorbed.
  4. While the quinoa is cooking, slice 1 medium zucchini and prepare 1 cup of cherry tomatoes.
  5. Place the zucchini and tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes.
  6. Once the vegetables are roasted, remove them from the oven and let them cool slightly.
  7. Fluff the cooked quinoa with a fork and add it to your serving bowl.
  8. Top the quinoa with the roasted vegetables, 100g of crumbled feta cheese, and a handful of black olives.
  9. For the dressing, mix 2 tablespoons of tahini with the juice of 1 lemon, then drizzle over the bowl.
  10. Garnish with fresh parsley or any herbs of choice before serving.
