Ingredients

  • 3 ears of corn (charred)
  • 1 can (400g) black beans (drained and rinsed)
  • 1 ripe avocado (diced)
  • 100g cotija cheese (crumbled)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Place the corn on the grill and char for about 10-15 minutes, turning occasionally until cooked and browned.
  3. Remove the corn from the grill and let it cool slightly before cutting the kernels off the cob.
  4. In a large mixing bowl, combine the charred corn, black beans, diced avocado, and crumbled cotija cheese.
  5. In a separate small bowl, whisk together the lime juice, chopped cilantro, olive oil, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad mixture and toss gently to coat.
