Ingredients

  • 200g soba noodles
  • 150g firm tofu
  • 50g edamame (shelled)
  • 1 medium carrot
  • 2 tablespoons miso paste
  • 1 tablespoon grated ginger
  • 1 tablespoon cooking oil
  • Salt, to taste

Instructions

  1. Start by cooking soba noodles according to package instructions. Drain and set aside.
  2. In a bowl, combine miso paste, grated ginger, and a bit of water to create the dressing. Mix well.
  3. Press tofu to remove excess moisture, then cut into cubes.
  4. In a pan, heat a little oil over medium heat. Add tofu cubes and cook until golden brown on all sides.
  5. Prepare carrots by julienning or slicing thinly.
  6. In a separate pot, boil edamame until tender, then drain.
  7. Assemble the bowl by placing soba noodles at the base, followed by tofu cubes, edamame, and carrots on top.
