Ingredients

  • 250g couscous
  • 200g carrots
  • 1 can (400g) chickpeas
  • 100g dried apricots
  • 3 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and chop the carrots into rounds, then toss them in olive oil, salt, and pepper.
