Ingredients

  • 400 g canned chickpeas
  • 250 g shredded carrots
  • 100 g raisins
  • 50 g almonds, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon orange blossom water
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)
  • Salt, to taste
  • Cilantro, for garnish

Instructions

  1. Rinse and drain the chickpeas before placing them in a pan over medium heat.
  2. Add cumin, paprika, and a pinch of salt to the chickpeas and cook for about 5 minutes until warmed through.
  3. While the chickpeas are cooking, shred the carrots and place in a large bowl.
  4. Add the raisins and almonds to the bowl with the carrots.
  5. In a separate bowl, whisk together olive oil, orange blossom water, lemon juice, and honey to create the dressing.
