Ingredients

  • 200 grams polenta
  • 500 milliliters vegetable broth
  • 200 grams mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs (rosemary or thyme)
  • 2 large eggs
  • 30 grams parmesan cheese, shaved

Instructions

  1. Start by preparing the polenta according to the package instructions, using vegetable broth for extra flavor.
  2. While the polenta cooks, heat olive oil in a skillet over medium heat.
  3. Add sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
