Ingredients

  • 1 cup barley
  • 200g mushrooms
  • 2 tablespoons truffle oil
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste
  • Freshly grated Parmesan cheese for topping

  1. In a medium saucepan, cook 1 cup of barley according to package instructions until tender, about 30 minutes.
  2. While the barley cooks, clean and slice 200g of mushrooms.
