Ingredients

  • 500g chicken breast
  • 100ml orange juice
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 2 tablespoons vegetable oil
  • 200g teff
  • 200g broccoli florets
  • 50g cashews, chopped
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, marinate chicken pieces with orange juice, ginger, soy sauce, honey, and garlic for at least 15 minutes.
  2. While the chicken marinates, rinse teff under cold water, then cook according to package instructions (usually simmer in water for about 15-20 minutes).
  3. In a non-stick skillet, heat oil over medium heat. Once hot, add marinated chicken and cook until golden brown and cooked through, about 6-7 minutes per side.
  4. Add remaining marinade to the skillet and cook for another 2-3 minutes until the sauce thickens slightly.
  5. Steam broccoli until bright green and tender-crisp, roughly 3-4 minutes.
  6. To assemble the bowl, layer teff at the bottom, add chicken on top, and garnish with steamed broccoli and chopped cashews.
