Ingredients

  • 1 cup steel cut oats
  • 3 cups water
  • 1 tsp salt
  • 2 fresh peaches
  • 1 tsp butter
  • 1 splash vanilla extract
  • 1/4 cup sliced almonds
  • 2 tbsp honey

Instructions

  1. Begin by bringing 3 cups of water to a boil in a medium saucepan.
  2. Add 1 cup of steel cut oats and a pinch of salt to the boiling water.
  3. Reduce heat to low and let the oats simmer for about 20-30 minutes, stirring occasionally until they reach a creamy consistency.
  4. While the oats are cooking, wash and slice 2 fresh peaches.
  5. In a skillet over medium heat, add a teaspoon of butter and the sliced peaches. Cook until they are caramelized, about 5-7 minutes.
  6. Once the oats are cooked, remove them from heat and stir in a splash of vanilla extract.
  7. Serve the oats in bowls, topped with the caramelized peaches, a handful of sliced almonds, and a drizzle of honey.
