Ingredients

  • 1 cup basmati rice
  • 1 tablespoon saffron
  • 2 tablespoons olive oil
  • 2 salmon fillets
  • Salt and pepper to taste
  • 1 teaspoon dried dill
  • 1 cucumber, sliced
  • 1 small onion, finely chopped
  • 1 teaspoon sumac
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare the saffron rice by cooking 1 cup basmati rice according to package instructions, adding a pinch of saffron during cooking.
  2. In a pan, heat 2 tablespoons olive oil over medium-high heat.
  3. Season 2 salmon fillets with salt, pepper, and 1 teaspoon of dried dill.
  4. Once the oil is hot, add the salmon skin-side down and sear for 4-5 minutes until crispy.
  5. Flip the salmon and cook for another 3-4 minutes until internal temperature reaches 145°F (63°C).
  6. Meanwhile, mix sliced cucumbers and finely chopped onions with a sprinkle of sumac in a bowl.
  7. Once the rice is cooked, fluff it with a fork and mix in fresh herbs like parsley or cilantro.
  8. Plate the saffron rice, top with seared salmon, and garnish with cucumber and sumac onions before serving.
