Ingredients

  • 2 medium beets
  • 100g goat cheese
  • 50g walnuts
  • 150g quinoa
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • Juice of 1 orange
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Wash and peel the beets. Cut them into thick slices and place them on the baking sheet.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Roast the beets in the preheated oven for about 35–40 minutes until tender.
  5. While the beets are roasting, rinse quinoa under cold water, then cook according to package instructions (usually 1 cup quinoa to 2 cups water).
