Roasted Carrot & Lentil Salad Bowl

Ingredients

  • 250g lentils
  • 300g carrots
  • 100g feta cheese
  • 60ml olive oil
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the carrots, then cut them into rounds.
  3. Spread the carrots on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast in the oven for about 25-30 minutes until tender and slightly caramelized.
  5. Meanwhile, cook the lentils according to package instructions.
  6. Prepare the cumin vinaigrette by whisking together olive oil, lemon juice, cumin, salt, and pepper in a bowl.
  7. Once the lentils and carrots are cooked, combine them in a large serving bowl.
