Roasted Cherry Tomato & Burrata Bowl

Ingredients

  • 200 g cherry tomatoes
  • 125 g burrata cheese
  • 100 g fresh arugula
  • 30 g pine nuts
  • 30 ml olive oil
  • Salt and pepper to taste
  • Balsamic reduction for drizzling

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the cherry tomatoes and place them in a baking dish.
  3. Drizzle with olive oil, and season with salt and pepper to taste.
  4. Roast in the oven for 20-25 minutes until they are soft and slightly charred.
  5. While the tomatoes are roasting, prepare the arugula by rinsing and drying it.
  6. Toast the pine nuts in a dry skillet over medium heat for 3-5 minutes until golden brown.
  7. In a serving bowl, layer the arugula at the bottom.
  8. Add the roasted cherry tomatoes on top of the arugula.
  9. Gently place the burrata in the center of the bowl.
  10. Sprinkle the toasted pine nuts around the burrata.
  11. Drizzle with balsamic reduction before serving.
