Roasted Garlic Turkey & Spelt Bowl

Ingredients

  • 450g turkey breast
  • 100g spelt grains
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 200g fresh spinach
  • 50g sun-dried tomatoes, chopped
  • 50g parmesan cheese, shaved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix olive oil, minced garlic, salt, and pepper. Coat the turkey breasts in the mixture.
  3. Place the turkey on a baking sheet and roast for about 25-30 minutes, or until cooked through. Let it rest for 5 minutes before slicing.
  4. Meanwhile, rinse the spelt grains under cold water, then cook according to package instructions, typically about 20-30 minutes.
  5. In a skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté for 3-4 minutes until wilted.
