Ingredients

  • 1 cup pearl barley
  • 2 medium carrots
  • 2 medium sweet potatoes
  • 2 medium beets
  • 4 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Balsamic glaze for drizzling
  • Fresh herbs (optional, e.g., thyme)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the root vegetables (carrots, sweet potatoes, and beets) and cut them into evenly-sized pieces.
