Ingredients

  • 4 lamb chops
  • 2 tablespoons fresh rosemary
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 cup farro
  • 2 cups root vegetables (carrots, parsnips)
  • 2 tablespoons olive oil
  • 1 cup plain yogurt
  • 2 tablespoons fresh mint, chopped
  • Lemon juice, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season lamb chops with rosemary, garlic, salt, and pepper. Set aside.
  3. Cook farro according to package instructions, drain, and set aside.
  4. Toss root vegetables (carrots, parsnips) with olive oil, salt, and pepper on a baking sheet.
  5. Roast vegetables in the oven for 25-30 minutes until tender.
  6. While vegetables are roasting, heat a skillet over medium-high heat and sear lamb chops for 4-5 minutes on each side until browned and cooked to desired doneness.
  7. In a small bowl, mix yogurt with chopped mint, salt, and a squeeze of lemon juice.
