Ingredients

  • 4 chicken drumsticks (about 600g)
  • 1 teaspoon saffron threads
  • 2 cloves garlic, minced
  • 1 tablespoon paprika
  • Salt to taste
  • 2 tablespoons olive oil
  • 200g couscous
  • 50g roasted pistachios, chopped
  • 50g dried apricots, diced
  • 150g yogurt
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken with saffron, garlic, paprika, salt, and olive oil for at least 30 minutes.
  2. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  3. Place the marinated chicken on the tray and bake for 25-30 minutes, or until thoroughly cooked and golden.
