Ingredients

  • 1 cup oatmeal
  • 2 cups fresh spinach
  • 1 egg
  • 2 tablespoons parmesan cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook 1 cup of oatmeal according to package instructions.
  2. While the oatmeal is cooking, heat a skillet over medium heat and add a splash of olive oil.
  3. Add 2 cups of fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
