Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups fresh spinach
  • 2 eggs
  • 1 tablespoon olive oil
  • 50 grams feta cheese
  • Salt and pepper, to taste

Instructions

  1. Begin by rinsing 1 cup of quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water and bring to a boil.
  2. Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes or until all water is absorbed. Fluff quinoa with a fork and set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of fresh spinach and sauté until wilted, about 3-5 minutes.
  4. While the spinach is cooking, bring a pot of water to a gentle simmer and poach two eggs, cooking each for about 4 minutes for a soft yolk.
  5. To assemble, place a serving of quinoa in a bowl, top with sautéed spinach, and carefully add the poached eggs on top.
  6. Sprinkle with 50 grams of crumbled feta cheese and season with salt and pepper to taste. Enjoy warm!
