Ingredients

  • 200g Ahi tuna
  • 2 large eggs
  • 100g green beans
  • 100g spring mix
  • 50g olives
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by preparing the hard-boiled eggs. Place eggs in a saucepan and cover with cold water, then bring to a boil. Once boiling, cover the pan, remove it from heat and let it sit for 10-12 minutes. Transfer the eggs to ice water to cool, then peel.
  2. Next, trim the green beans and blanch them in boiling water for about 2-3 minutes until they are bright green and tender-crisp. Immediately transfer them to an ice bath to halt cooking.
