Sesame Ginger Tempeh & Brown Rice Bowl

Ingredients

  • 200g tempeh
  • 150g brown rice
  • 100g bok choy
  • 50g edamame
  • 30ml soy sauce
  • 15ml sesame oil
  • 10g ginger (grated)
  • 10g sesame seeds

Instructions

  1. Start by preheating your oven to 200°C (400°F).
  2. Prepare the tempeh by cutting it into cubes and marinating in a mixture of soy sauce, grated ginger, and sesame oil for at least 30 minutes.
  3. Spread the marinated tempeh cubes on a baking sheet and roast in the oven for 20-25 minutes, turning halfway through, until golden brown and crispy.
  4. Meanwhile, rinse and cook brown rice according to package instructions.
  5. While the rice is cooking, steam the bok choy until tender, about 5 minutes.
  6. In a small bowl, combine additional soy sauce, ginger, and sesame seeds to create the glaze.
  7. Once the rice is cooked, assemble the bowl by placing a serving of brown rice at the bottom.
