Ingredients

  • 150g cooked quinoa
  • 1 ripe avocado
  • 2 soft-boiled eggs
  • 1 tsp everything bagel seasoning
  • 100g cherry tomatoes
  • 1 lime for serving
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions, then set aside to cool slightly.
  2. While the quinoa is cooking, bring a small pot of water to a boil and gently add the eggs. Boil for about 6-7 minutes for soft-boiled eggs.
  3. Once the eggs are done, transfer them to an ice bath to cool, then peel and set aside.
  4. In a bowl, mash the avocado with a fork and season with salt and pepper to taste.
  5. Assemble the bowl by adding a generous scoop of quinoa, followed by the mashed avocado.
  6. Halve the soft-boiled eggs and place on top of the avocado.
  7. Garnish the bowl with everything bagel seasoning, cherry tomatoes, and fresh herbs.
  8. Serve immediately with lime wedges on the side for an extra zing.
