Nourishing Smoked Salmon & Avocado Breakfast Bowl

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado
  • 100g smoked salmon
  • 1 large egg
  • Salt to taste
  • Pepper to taste
  • Fresh dill for garnish

Instructions

  1. Begin by rinsing 1 cup of quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil.
  3. Once boiling, reduce the heat, cover the saucepan, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  4. While the quinoa is cooking, prepare a soft-boiled egg. Bring a small pot of water to a gentle boil, gently add one egg, and cook for 6-7 minutes.
  5. When the egg is done, transfer it to an ice bath for a few minutes to stop the cooking process. Peel and set aside.
  6. Slice 1 ripe avocado and set aside.
  7. Once the quinoa is cooked, fluff it with a fork and portion it into bowls.
  8. Top each bowl with slices of smoked salmon, avocado, and half of the soft-boiled egg.
  9. Garnish with fresh dill and season with salt and pepper to taste.
  10. Serve immediately and enjoy your nutritious breakfast bowl!
