Ingredients

  • 200g sweet potatoes
  • 100g smoked turkey
  • 100g egg whites
  • 50g fresh spinach
  • 50g cherry tomatoes
  • 30g feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice sweet potatoes into cubes.
  3. Toss sweet potato cubes with olive oil, salt, and pepper.
  4. Spread on a baking sheet and roast for about 25-30 minutes or until tender and lightly browned.
  5. While sweet potatoes are roasting, whisk egg whites in a bowl until slightly frothy.
  6. Heat a non-stick skillet over medium heat and add smoked turkey, cooking until heated through, about 2-3 minutes.
  7. Add spinach and halved tomatoes to the skillet, sautéing until spinach is wilted.
