Ingredients

  • 200 grams brown rice
  • 1 can (400 grams) black beans, rinsed and drained
  • 150 grams sweet corn
  • 200 grams cherry tomatoes, diced
  • 1 avocado, sliced
  • 150 grams plain yogurt
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Cook brown rice according to package instructions and set aside.
  2. In a pan, heat olive oil over medium heat. Add drained black beans and spices (cumin, paprika, salt, and pepper) and cook for about 5 minutes.
  3. While beans are cooking, prepare the cilantro-lime crema by mixing yogurt, lime juice, and chopped cilantro in a bowl.
  4. Prepare fresh salsa by combining diced tomatoes, diced onion, jalapeno, cilantro, lime juice, and salt in a separate bowl.
