Ingredients

  • 200g grilled chicken breast
  • 100g mixed salad greens
  • 100g black beans
  • 100g corn
  • 50g cherry tomatoes
  • 50g red cabbage
  • 30ml chipotle ranch dressing
  • 1 lime, cut into wedges

Instructions

  1. Start by seasoning the chicken breasts with salt, pepper, and your choice of spices.
  2. Grill the chicken over medium heat for about 6-7 minutes on each side or until fully cooked.
  3. While the chicken is cooking, rinse and drain the black beans and corn.
  4. Prepare your salad bowl by arranging a bed of mixed greens at the bottom.
