Southwest Corn and Quinoa Salad Bowl Fiesta

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans (400g)
  • 1 cup corn (fresh or canned)
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup cilantro
  • Salt and pepper to taste
  • 1/4 cup chipotle ranch dressing

Instructions

  1. Rinse 1 cup of quinoa under cold water and cook it in 2 cups of water, bringing it to a boil. Reduce to a simmer for 15 minutes, or until the water is absorbed.
  2. While the quinoa is cooking, rinse and drain 1 can of black beans.
  3. Roast 1 cup of corn in a skillet over medium heat until slightly charred, about 5-7 minutes.
  4. Chop 1 cup of cherry tomatoes in halves and slice 1 avocado.
  5. In a large bowl, mix cooked quinoa, black beans, roasted corn, cherry tomatoes, and avocado together.
  6. Add minced cilantro to taste and season with salt and pepper.
  7. Drizzle with chipotle ranch dressing.
  8. Toss everything gently to combine and serve immediately, or refrigerate for later.
